my recipe box: cinnamon maple coffee creamer

Is it just me or is fall in the air?  Hehe.  I know, it's just me.  I'll back off until state fair week is over.  But that's all you "can't get enough of summer" people get.  I'm ready for cooler temps (sweaters and jeans!), the changing of the leaves (colors!), apples & pumpkins (ermahgerd the orchard!), football (GO HAWKS!)...I can hardly wait!

No matter how hot it is, I usually have need a cup of hot coffee in the morning.  Awhile back I noted this link, at the time it was a bit of a joke, but I was curious enough to give it a try.  I have found on this lifelong journey to eating fresh, wholesome foods, caring about where foods come from, and cooking meals made from single ingredients that there is a lot of give and take (yes, I still add the reddi whip to my cup).  And guess what - it's ok.  You can't change everything at once, but small steps really make a difference.  This is the latest baby step for me.  Try it out and see what you think!  The way I ended up liking it best is similar to the "Cinnamon Strudel" original recipe on the link, just a couple of changes.

Cinnamon Maple Coffee Creamer

1 half pint heavy cream
1 cup whole milk
4 tbsp. pure maple syrup (nothing against Aunt Jemima but seriously don't do it)
1 tsp. cinnamon
2 tsp. vanilla

Stir together heavy cream, whole milk, syrup, & cinnamon in a small saucepan on low heat until it steams (try not to boil).  Remove from heat, strain through a fine sieve (pouring over cheesecloth in a small strainer also works) and add vanilla.  Store in an airtight container in the refrigerator, will keep up to two weeks.

For now cinnamon maple will suffice, but soon shelves will be stocked with all of the holiday creamer (irresistible) flavors.  I'll be doing some experimenting and will post my favorite homemade pumpkin spice version just in time to enjoy throughout the fall season.  Happy cup of coffee to you!

Cinnamon Vanilla Crème Liquid

INGREDIENTS: WATER, SUGAR, PARTIALLY HYDROGENATED SOYBEAN AND/OR COTTONSEED OIL, AND LESS THAN 2% OF SODIUM CASEINATE (A MILK DERIVATIVE)**, NATURAL AND ARTIFICIAL FLAVORS, DIPOTASSIUM PHOSPHATE, DISODIUM PHOSPHATE, MONO- AND DIGLYCERIDES, CELLULOSE GEL, CELLULOSE GUM, COLOR ADDED, CARRAGEENAN.

The hand sewn numbered onesies were a gift from Aunt Lianna.  Thanks Lianna so much for such a precious gift!  It made sure that (and this is especially important with a 2nd born) I took pictures at least once a month.  I didn't necessarily get them taken on the same day each month which might have been slightly more accurate, more-so tried to represent something new that he was able to do each month.  Such a priceless treasure now.  Thank you thank you Aunt Nana!!

yesterday

I'm writing it down because I want to remember it.  The dishes were done, the counters were wiped (mostly) clean, and the laundry sorted.  One load in the wash and one on deck.  The dusting wasn't and the floors weren't.  (But when are they?)   By 8:30am we were all dressed and ready for a stroller/bike ride (even mommy had showered)!   Eighty something felt cool compared to recent disgustingly hot temperatures but I was still glad I had chosen a tank and shorts.  Hannah led the way while mommy and AJ followed, all the way mommy pushing with one hand and holding her hot coffee in the other (It's a gift).  We made it to our favorite pond and found a spot to sit for a water break while Hannah (aka Rapunzel) provided an interpretive dance and skipping show to random Disney on Pandora.  After that it was time to go home.  AJ was getting sleepy and ready for his morning nap. Hannah raced in the garage for a popsicle and when mommy said it was too early for popsicles there were no tears.  AJ took a nice long nap and when he woke up it was time to leave the house for some fun at the library!  We drove to the Urbandale library for a change of pace and checked out 20 books (little behind on the summer reading program anyone else?)  The highlight for Hannah was the "self checkout."  Luckily people piling up behind us were very patient.  After she tore off the longest receipt we have received from a library as of yet, we headed outside to check out a little garden area we saw on the way in.  We explored a little, counted 7 shoots of water squirting out of the fountain, and discovered a little creek and cute little butterfly garden (that unfortunately the heat had basically destroyed).  The choices for lunch were Brueggers or Z'mariks and Hannah chose Brueggers (which I was hoping for)!  One of the places I used to frequent weekly but don't get around to much anymore.  After my usual Asiago Bagel with low fat Veggie cream cheese, BBQ chips, & fountain Coke, I was in a happy place.  Daddy called with super good news, so good that it demanded immediate attention and his favorite Heath bar blend of ice cream.  We couldn't stay long, just made a couple loops around the block and told him goodbye to head home for naps.  I was sure that since it was later than normal and we had a good thirty minute drive from downtown to Polk City; Mission: Arrive Home Before Sleeping would be a total failure, but I was spared by an iPhone and an extra blue straw.  It's called using your resources people!  And because of this, I got to use the computer and watch Friends in complete silence for an entire hour.  When they awoke we got a start on our library book reading binge and then decided why not go outside and play with the water stuff!  Stuff = our own version of a water table...a 5 gallon pail of water and various recycled scoops, funnels, barbies that can get wet, & recycling tubs.  AJ especially loved this and really wasn't afraid to get himself (or his sister) wet.  He also loved drinking the water from a little cup, which I discouraged at first but then his expressions after taking a drink were so funny that I couldn't help but let the nonsense continue.  It was a clean bucket without too many sticks floating in it?  And then, the most glorious thing of all happened.  Rain clouds quickly hovered, the wind suddenly picked up, and it started to rain - when the kids were already wet!  AJ was scared and just wanted to stay safe with mommy.  I knew this would not be the case with Hannah.  I quickly fetched her umbrella.  And I watched.  It wasn't time for anything.  It was just time to be.  Have you ever watched a 4 year old in the rain?  She danced and ran and jumped and twirled and splashed with "I can't believe my mom is letting me do this" smiles from ear to ear.  Then daddy came home and encouraged even more jumping in the biggest puddles at the end of the driveway.  We watched her for quite awhile and then in an unfortunate turn of events a tornadic wind gust literally knocked her on her knees and left her janky umbrella looking slightly more janky.  Yes, this is what decided it was time for this good thing to come to an end.  So we came inside for baths and ate supper in our jammies.  Daddy played with the kids while I picked up the kitchen and made my first zuchinni bread, and not just of the season, but ever (which by the way turned out fantastic...watch for the recipe soon)!  And...as if our day wasn't exciting enough, just before going to bed AJ took two steps to mommy!

A promised quilt and finished room for my baby boy

Two out of three feels pretty good.  Here are some pictures of the finished room & quilt and links to inspiration & sources...

a) Baby quilt

Inspiration came from two sources: the super cute and beautifully illustrated children's book Hopper and Wilson by Maria Van Lieshout, and this quilt I randomly found on Flickr.  Obviously my quilting is not as good as hers.  I only wish I had that much ability/patience with free motion quilting.  I made some free motion cloud like shapes near the white blocks in the sky and then the rest I finished with my walking foot.  I wanted the quilt to coordinate with his room which has a boat theme and combined these ideas piece together (what hopefully looks like) a paper boat floating across the horizon. The quilt is made entirely from Dan's old shirts, with the exception of the newsprint boat fabric & polka dot binding/backing.  It is a little hard to tell by the pictures but the blocks across the top & bottom of the quilt are the shirt pockets.  I have a feeling that once he is a little bigger these will be filled with little green army guys and the like.  Every time he goes to sleep, AJ pulls his quilt into bed with him to snuggle.  That makes a mama happy!





b) Decorated Room

We decided that the boat theme would make a great theme for his room, we tend to go with themes relevant to the day they were born and since he was born the Friday of Memorial Day Weekend we thought that boats/fish, etc. would be appropriate.  It is kind of sad, isn't it, that his room wasn't finished until just after his first birthday?  I guess with our kids we opted to do the crown moulding, paint, & blinds before they were born, and then the details are filled in during the first year.  It goes by pretty quickly anyway and it's nice now that all the baby "stuff" (that takes up space and is hard to coordinate) is no longer needed!  Yahoo!

one year ago yesterday

To tell the story about the day you were born, first you need to know some background information.  I would say that the true anticipation for the day you would be born began May 13th.  It was a Friday, the day of our 36 week appointment.  Along with many other mothers, I breathed a sigh of relief at this point in the pregnancy because the next day started my 37th week; the day you were considered full term and could be delivered if needed without worry.  I was half expecting you to come early because your big sister was born one week early, but half expecting you to be one week late because I got off so easy the first time around.  At the appointment we had the doctor check to see if I was dilated at all yet and Dr. Niederhauser’s response was something like “Woah, yeah, you’re 4cm.”  Hmmm.  Almost halfway there.  Right.  That sent us into a nesting panic attack.  Ok, maybe it was just mommy.  From that point on, I was prepared that…any minute…it could happen.  And it was worse to know that when I was in labor with Hannah I went from 5cm to 10 cm in one hour.  One hour.  I was glad that I knew this information because it was helpful; we now understood the sense of urgency to get to the hospital in the case that labor began or my water broke.  In many ways, however, it made the waiting so.much.worse.

Put the bags in the car; take the bags out of the car (repeat).  Leave the office as if never coming back; return to work in the morning (repeat).  Was that a contraction?  YES.  No.  No.  No.  Nothing.  No. Maybe.  I think.  Nope.  (repeat).  After almost two weeks of living on pins and needles, two trips to triage because I just had a “feeling” something wasn’t right, and several trips to see Dr. Niederhauser without much change, I finally stopped waiting for it to happen at any second.  Instead I tried to take it easy and know that you would come when you were ready.  I continued to plan my day so that I was prepared if it happened, but tried not to question every twitch my body made.  I focused on my next appointment instead.  It was on Friday, May 27th, the day before I was 39 weeks along.  It was with Dr. Gisi, who is one of my favorite doctors at the clinic and familiar with my history.  We knew he would provide a fresh perspective and we fully trusted his advice. 

May 27th arrived.  We got ready for work and took Hannah to school as usual.  I put all of our hospital bags in the car as I had been every morning for the past two weeks.  I drove to work and completed as many tasks as I could before leaving at 1:00pm for my 1:45pm appointment.  I joked with my co-workers as I left that I would see them later.  We laughed because the week before I had told everyone that I wasn’t sure I’d be back and had fully shut down my computer and locked up my office.  Nope, this time I would not jinx it, I did not shut down or lock up.  I left a little early because I was starving and thought I would pick up a sandwich from the snack shop in the hospital atrium before heading up to the clinic.  Your dad and I met at the snack shop but to my surprise they were partially closed for remodeling.   No cold sandwich for me; I settled for a bag of Doritos.

Dr. Gisi came in the room and I told him that we had been around 5cm for a couple of weeks.  He was surprised to hear how far along I was without contractions starting.  This confirmed my suspicion that even though the doctors told me repeatedly that some women “walk around at 5cm for weeks,” it wasn’t very common.  He checked and responded “You are actually 6cm now.  A good 6 cm.”  He said that my water would break at any point, probably tonight.  I fully believed him, he was the one that had checked me at my 39 week appointment with Hannah, and in fact my water did break that night. 

I then asked  him if we should be worried about getting to the hospital in time, since we live in Polk City which is about a 30 minute drive to the hospital (while speeding).  “Well, when you are this far along, you could very well have a baby within one hour of your water breaking” was his response.  This I also fully believed as I had gone from 5cm to 10 cm in one hour while in labor with Hannah.  He said that he would rather see us walk around the hospital for a couple hours, because that alone could be enough for my water to break, and then go up and check in at Labor & Delivery for an induction.  “Otherwise Dan could be delivering a baby on the side of the road tonight and we really don’t want that.”  Agreed.  In the meantime he was going to check in with the on-call doctor to make sure they were ok with me being induced one day before I was 39 weeks (doctors at my clinic hold their patients to the 39 weekpoint for scheduling an induction).  I smiled because Dr. Niederhauser had already told me that she was on call and that if I didn’t go into labor before Friday to just show up at L &D…enough was enough!

So that was it, it was (finally) the day!  Yay!  We decided that we would still follow through with Dr. Gisi’s suggestion to walk around a little.  Your dad’s office at Wellmark was just across the street from the hospital so we walked over so he could shutdown his computer and let his coworkers know that he would be out the following week.  I also let my coworkers know that they were going to keep me for a couple of hours so I would not be back.  I was happy to see my very close friend Stina working in the entryway (she also works at Wellmark) and she offered to walk laps with me while your dad took care of things in his office.  Your dad and I walked back to the hospital rapidly taking care of plans for Clark’s to pick up Hannah from school, and letting family members know that we would be delivering a baby soon!   Yes, you could say that things happened quickly…

At approximately 3:00pm we walked straight past triage and straight into a room of our own in L & D!    The nurse quickly checked us in; asking all kinds of questions, while she inserted an IV and hooked me up to all sorts of monitors.  She also confirmed that I wanted the epidural.  Yes.  It was around 4:00pm that Dr. N came in to check on things, she was ecstatic that she would have the privilege to deliver our baby (I think she and Dr. Gisi both really wanted to deliver you, he was working the following morning)!  She broke my water and we waited for the anesthesiologist to arrive with the epidural.

Your dad was so present and helpful throughout everything.  I don’t mean just while I was laboring in the hospital, he came to all of your baby appointments and went through everything along with me during the past nine months.  He was, however, also very encouraging and supportive while I was in labor.  He wasn’t sure when I delivered Hannah if he would make it through labor without passing out.  But because that went so well, he felt very confident this time we could handle it, just the two of us.  And we did!  Nothing could have made me happier in that moment; we would be the ones to welcome you first, we created you and we love you the most.

By 5:00pm, and after a little bit of a challenge inserting the epidural just right (turns out if you don’t eat enough lunch you might almost pass out during this process), I started to become numb from the waist down.  It felt good and bad at the same time for awhile.  I couldn’t feel pain, but I had an uneasiness in my legs like they were falling asleep and I really wanted to either shake them or get up and walk…but obviously I couldn’t do either.  I couldn’t stand it, but it wasn’t anything that a few clicks on the epidural didn’t solve.  By 6:00pm things didn’t feel at all, and that felt better.  I started to relax.  After another hour I was fully dilated to 10cm and ready to push.  I just couldn’t wait to hold you in my arms.

7:00pm, people started entering the room as if the circus was about to begin.  It didn’t surprise me; it wasn’t my first circus after all.  I was a little more relaxed this time and I remember noticing in particular the ridiculous looking garb worn by the staff, blue space-like looking suits and all sorts of crazy shields.  At the last minute we took a quick poll in the room to see how many guesses for ‘boy’ and how many for ‘girl.’  Your dad, Dr. N and her crew of space people all guessed ‘boy’ and I guessed ‘girl.’  Then the pushing began.  I remember Dr. N saying “Come on, come on, come on, come on, push Mama” as things contracted and you inched your way into the world.   Five good rounds of contractions and pushing and you were here.

8:02pm “Do you see what you’ve got there mommy and daddy?” asked Dr. N while smiling as you entered our world.  Your dad and I were both thinking the same thing as tears rolled down our cheeks –Please just say it!  “It’s a BOYYYYYY!!!”  And just like that, you were here.  Our family of three became four.  Dr. N set you on my chest.  Daddy and mommy were so happy to see you and to know that you were healthy.  Even though neither of us would have admitted it until then, we were so happy because we both really wanted a boy!  You were cute from the moment you were born, in fact, the cutest boy anyone has ever seen!  We just held you and looked at you together for the longest time, our precious little AJ, our miracle.

: : I'm eating this for breakfast.  The most delicious "breakfast" bar I've ever had, paired up with Starbucks blonde (french) roast, Cinnabon creamer, & Reddiwip. 
: : I'm considering that I've undone anything "natural" about the ingredients in my breakfast by adding the creamer & whipped cream to my coffee. 
: : I'm wondering how we ever survived without the internet.  Look, that's how you make it.
: : I'm already thinking about the next meal and wondering what Hannah will pick for her lunch plate.  I'm smiling as I get such enjoyment out of watching her pick healthy foods for her and AJ to eat and love it that she understands a healthy lunch includes something from each food group.
: : I'm amazed that until a few months ago, I had never steamed a carrot.  And now, it's a weekly event.
: : I'm laughing about how much shouting AJ did this morning and wondering what it will sound like when he starts to use words.  He's just so passionate about everything.  He really is.
: : I'm sitting at my kitchen island and despite the clutter around me, I'm thinking how beautiful and warm my kitchen is.  (I'll post a picture sometime when It's clean)
: : I'm thankful for such an amazing husband that hung these cabinets, installed this wood floor (well until he threw his back out), and installed my beautiful tile backsplash.
: : I'm excited about upcoming projects, including installing flooring in what will soon be my very very very own studio space.
: : I'm anticipating much more creating going on in my studio this summer.
: : I'm loving today!
